Hi Guys,
I am having trouble with starch and amylase practical, again, what is the best amylase to buy and where from. I have tried powder and liquid and prefer liquid.
Do you use 2% or 1% starch? I have used 1% generally but have heard other people use 2%.

I use pancreratin (powdered dried pig pancreas - it contains all the pancreas enzymes so can be used for other non starch enzynme practicla such a fat digestion and protein digestion
With fresh 2% starch and 0.1% Pancreatin 5ml of each room temp changes in 7 mins for temp

I use Diastase for pH because it optimum is around 6 so get a good curve (pancreatin has an alkaline optimum so not such a good curve)
2ml amylase with 1 ml pH buffer
add 2ml 2% starch
diastase 0.5% as amylase -
buffer pH 4,6,8,10
pH 6 changes in 1 minute
